Super Speedy Chilli Prawn Spaghetti
Here is a beautifully fresh dish, with minimal prep and cooking time- ideal for busy weekday evenings! To up the ante on veg, you could add your favourite pepper (we like yellow for extra colour) or finely diced courgette. Pair with a crisp dry white like Pinot Grigio!
Ingredients
Serves 4
- ¼ of an onion finely diced
- 2 garlic cloves, peeled and finely chopped
- 2 tablespoons olive oil
- 300g Co-op cherry tomatoes, halved
- 330g Co-op cooked and peeled king prawns
- 250g Co-op spaghetti
- A small handful of fresh basil leaves, torn
- Pinch of dried chilli flakes
- Salt and freshly ground black pepper to taste
Method
- Bring a large pan of salted water to the boil and add the pasta. Cook the pasta according to package instructions for timing. Drain and set aside, reserving some of the starchy pasta water.
- Meanwhile in a large skillet add the oil and the garlic over medium heat. When the olive oil is hot add the onion. Sautee for 3 minutes or until the onions are translucent.
- Add the cherry tomatoes, prawns, and dried chilli, cook until the prawns are cooked through and the tomato skins are splitting
- Add the spaghetti to the pan along with a little of your pasta water to loosen the sauce. Mix well, season with salt and ground black pepper, add your basil leaves and serve immediately.
