Spicy chorizo burger with relish
This easy-to-assemble burger is full of flavour and goes brilliantly with sweet, tangy piccalilli or caramelised onion chutney. If you fancy adding some cheese, try a slice of mild Cheddar or even some creamy blue.

- 500g beef mince
- 100g chorizo, finely diced
- 2 tbsp tomato purée
- 1 tsp paprika
- ½ tsp chilli flakes
- 4 burger buns
- 4 tbsp mayonnaise
- Handful salad leaves, plus extra, to serve
- 1 tomato, cut into 8 slices
- 1 red onion, sliced (optional)
- 4 tbsp Co-op Sweet Piccalilli or caramelised onion chutney
Method
- Put the beef mince, chorizo, tomato purée, paprika and chilli flakes in a large mixing bowl and combine well. Divide the mixture into four and shape into patties wide enough to fit your burger buns.
- Cook the burgers on a hot barbecue for 6-7 mins on each side until cooked through.
- Cut the bread buns in half, spread the bottom half with mayonnaise, top with salad leaves and tomato slices, a burger and red onion (if using). Spread each burger lid with your relish of choice and sandwich on top of the burger. Serve with extra salad leaves.
