Sweet chilli prawns and rice
This nutritious mix of prawns, brown rice and veg is a great supper dish for two but can easily be made to serve four – just double the ingredients.
Ingredients

- ½ lime, juiced
- 1 x 160g pack Co-op King Prawns (cooked)
- 1 tbsp olive oil
- 1½ tbsp sweet chilli sauce, plus extra to serve
- 1 courgette, halved lengthways and sliced
- 2 spring onions
- 1 clove garlic, finely sliced
- 140g cooked brown rice
- Handful coriander, finely chopped
Method
- Mix the sweet chilli sauce with the lime juice. Add the prawns to the mixture and toss to coat, then set aside.
- Heat the oil in a large frying pan or wok. Add the courgette and cook for 6-7 mins until just starting to turn golden, then add the spring onions and garlic and cook for another minute.
- Add the prawns along with the sweet chilli dressing and the cooked rice, and toss to warm through, cooking for 3-4 mins until everything is piping hot.
- Stir in some chopped coriander and serve with an extra drizzle of sweet chilli sauce, if you like.
