Sausage, veg and pesto traybake

Packed with Mediterranean vegetables, this colourful traybake makes a great family midweek meal.

Ingredients

Serves: 3-4

Ready in: 45 mins

  • 340g pack Co-op Chipolatas
  • 1½ tbsp olive oil
  • 2 peppers, red, yellow or orange, cut into 2cm strips
  • 1 small courgette, sliced
  • 1 red onion, cut into wedges
  • 2 tsp dried oregano
  • 1 tbsp pesto
  • 1 lemon, juiced
  • Handful fresh parsley, chopped

Method

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Put the sausages in a large roasting tin, drizzle with ½ tbsp oil and bake for 10 mins.
  3.  Add the peppers, courgette and onions to the tin, drizzle with the remaining oil and sprinkle with oregano; toss to combine. Spread the veg out in one layer and put the sausages on top.
  4.  Return to the oven for a further 25-30 mins until the sausages are cooked through and the veg is tender.
  5.  Meanwhile, mix the pesto with the lemon juice. Remove the roasting tin from the oven, push the sausages to one side and stir in the parsley. Divide the veg between your plates and top with the sausages and a drizzle of the lemon pesto.
