Philly cheese dogs

These Philly cheese dogs are a twist on an American classic, and the perfect easy-eating dinner for a relaxed evening in front of the small screen.

Ingredients

Serves: 6

Ready in: 30 mins

      • 6 Co-op Pork Sausages
      • 2 tbsp olive oil
      • 1 onion, sliced
      • 2 mixed peppers, sliced
      • ½ 200g pack Co-op chestnut mushrooms, sliced
      • 2 tbsp white wine, cider or malt vinegar (we used white wine vinegar)
      • Pinch sugar
      • 6 soft white hot dog rolls or a baguette cut into 6 pieces
      • English or American yellow mustard, to serve
      • 225g pack Co-op Mozzarella

      Method

      1. Cook the sausages under a moderate grill for 18-20 mins, turning halfway, until cooked through.
      2. Meanwhile, heat the oil in a large frying pan. Fry the onions and peppers with a pinch of salt over a low heat for 10 mins.
      3. Add the mushrooms, turn the heat up to medium, and fry for another 10 mins until everything is caramelised. Add the vinegar and sugar and cook for 2 mins more, stirring.
      4. Split the bread rolls in half and spread with a little mustard. Put a sausage in each roll, then top with the onion mixture.
      5. Tear the mozzarella into small pieces and divide among the hot dogs, dotting it over the top.
      6. Grill for 2-3 mins until the cheese is just melting and the bread has crisped a little. Serve drizzled with extra mustard, if desired.
