Sausage and baked bean stew

Baked beans are a great budget buy, and they are the magic ingredient in this super tasty, and super low-cost sausage and baked bean stew.

Ingredients

Serves: 4

    • 340g pack Co-op Irresistible Pork Chipolatas
    • ½ chicken stock cube
    • 1 onion, chopped
    • 1 large carrot, chopped
    • 2 garlic cloves, finely crushed
    • 400g tin Co-op Italian Chopped Tomatoes
    • 400g tin Co-op Baked Beans
    • 1 ½ tbsp olive oil
    • ½ tsp dried thyme

Method

    1. Heat ½ tbsp oil in a casserole dish or large saucepan with a lid and then add the sausages and cook over a medium heat for 5 mins until browned, turning occasionally. Scoop out and set aside.
    2. Make up the chicken stock cube with 250mls boiling water and set aside.
    3.  Add the remaining oil to the pan then add the onion and carrot. Turn the heat down and cook over a low heat for 6-7 mins until softened.
    4.  Add the garlic and thyme and cook for 2 mins more.
    5.  Stir in the stock and chopped tomatoes, then add the sausages back to the pan. Season and cook for 20 mins.
    6.  Add the baked beans to the pan and simmer for 10 mins more until thickened, season and serve.
