Marbled chocolate banana bread
This marbled chocolate banana bread features two of our Fairtrade favourites – Co-op bananas and Co-op Irresistible chocolate! It’s a sure-fire crowd pleaser and couldn’t be easier to make.

- 140g Co-op unsalted butter, softened, plus extra to grease
- 140g Fairtrade caster sugar
- 2 large Co-op free range eggs, beaten
- 140g self-raising flour
- 1 tsp baking powder
- 2 large ripe Co-op Fairtrade bananas, mashed
- 60g Co-op Irresistible Fairtrade 70% dark chocolate
Method
- Preheat the oven to 180°C/160°C fan/gas 4. Grease a 2lb loaf tin and line with baking parchment.
- Cream the butter and sugar together in a large bowl until light and fluffy. Beat a third of the egg and 1 tbsp flour into the butter until combined, then slowly add the remaining egg in two stages, beating well after each, until well combined.
- Sift the remaining flour and baking powder into the cake mixture. Add the mashed banana to the bowl, then fold everything in until combined.
- Put the chocolate in a microwaveable bowl and heat for 20 second intervals in the microwave until just melted. Stir and set aside.
- Put half the cake mixture into a separate bowl, then stir the melted chocolate into the mixture. Dollop the plain mixture and chocolate mixture into the prepared loaf tin in alternate spoonfuls, then swirl through with a knife 4 or 5 times to get the marbled effect.
- Put the tin in the oven and bake for around 50 mins, or until it is cooked through and a skewer inserted into the centre comes out clean. Allow the loaf to cool in the tin for 10 mins before turning out and cooling completely on a rack.
