Spring onion and cheddar scones
These cheesy savoury scones are perfect for a picnic lunch. Slather with butter or top with ham or smoked salmon for a special treat!
Ingredients

- 225g self-raising flour, plus extra to dust
- ½ tsp salt
- 1 tsp baking powder
- Pinch chilli flakes
- 55g butter, chilled and cut into cubes
- 100g Co-op Mature Cheddar, grated
- 4 spring onions, finely sliced
- 120ml milk, plus extra for glazing
Method
- Sprinkle a baking sheet with flour, then put into the oven and preheat to 200°C/180°C fan/gas 6.
- Sift the flour, salt and baking powder into a mixing bowl, then stir in the chilli flakes.
- Rub the butter into the flour mixture with your fingertips until it resembles breadcrumbs. Add 75g of the cheese and all the spring onions, and stir in with a kitchen knife until well combined.
- Make a well in the centre of the flour mixture, pour in most of the milk and stir with the knife until combined, then bring together with your hands, adding a little more milk if needed. The dough should be soft and spongy, but not wet.
- Turn the dough out onto a floured work surface. Pat the dough down into 2-3cm thick disc, then cut out scones with a 7cm round cutter.
- Brush the tops of the scones with a little milk, sprinkle with the remaining cheese, then transfer onto the hot baking tray and bake in the oven for 15-20 mins until golden and cooked through.
