One-pot pasta

Cooking the tomatoes and other ingredients in with the pasta and its water gives a nicely flavoured, silky sauce to the dish when it’s finished. Just add some fresh herbs and cheese and it’s dinner done!

Ingredients

Ready in: 12 mins

  • 170g spaghetti
  • 1 lemon, zested
  • 100g halved cherry tomatoes
  • 20g green beans
  • handful of olives
  • 2 garlic cloves, sliced
  • 2 tbsp of olive oil
  • handful basil leaves, torn
  • Parmesan, grated to serve

Method

  1. Put all the ingredients into a wide, shallow pan. Pour in enough boiling water to almost cover the ingredients (about 500ml). Season. Bring to the boil, then reduce to a simmer and cook for 10-12 mins, stirring occasionally, until everything is tender.
  2. Stir in the torn basil leaves, then serve and top with some grated Parmesan to finish.
