One-pot pasta
Cooking the tomatoes and other ingredients in with the pasta and its water gives a nicely flavoured, silky sauce to the dish when it’s finished. Just add some fresh herbs and cheese and it’s dinner done!
Ingredients

- 170g spaghetti
- 1 lemon, zested
- 100g halved cherry tomatoes
- 20g green beans
- handful of olives
- 2 garlic cloves, sliced
- 2 tbsp of olive oil
- handful basil leaves, torn
- Parmesan, grated to serve
Method
- Put all the ingredients into a wide, shallow pan. Pour in enough boiling water to almost cover the ingredients (about 500ml). Season. Bring to the boil, then reduce to a simmer and cook for 10-12 mins, stirring occasionally, until everything is tender.
- Stir in the torn basil leaves, then serve and top with some grated Parmesan to finish.
