Mango chicken kebabs

Fruity and delicious, these sticky, sweet skewers will be loved by kids and grown-ups. They’re super simple to put together and perfect for the barbie or grilling indoors.

Serves: 4-5
Ready in: 30 mins, plus marinating

Ingredients

  • 80g Co-op Mango Chutney
  • ½ tbsp olive oil
  • ½ tsp cumin
  • 1 garlic clove, crushed
  • 1.5-2cm piece ginger, finely grated
  • ½ orange, zested and juiced
  • 3 Co-op British Chicken Breast Fillets
  • 2 peppers, chopped into chunks
  • 1 mango, flesh chopped into chunks
  • 1 lime, cut into 6 wedges
  • Flatbreads or cooked rice, to serve
  • Co-op Greek Style Natural Yogurt and chilli sauce, to serve

For the salad:

  • 80g pack mixed leaves
  • 1/3 cucumber, cut into ribbons
  • Handful coriander, leaves chopped
  • 3 spring onions, sliced

Method

  1. Make the marinade by mixing the mango chutney, oil, cumin, garlic, ginger and orange zest and juice together in a bowl.
  2. Chop the chicken into 3cm chunks and toss with the marinade, then cover and chill for 1 hour, or 2 hours if possible, to marinate. If you are using wooden skewers, soak in water for 30 minutes.
  3. Take your skewers and slide the chicken, pepper and mango onto the sticks, alternating the items as you go.
  4. Cook on the barbecue, or under a hot grill, for 5-8 mins on each side, until lightly charred and cooked through, and the chicken has no pink remaining.
  5. Combine the salad ingredients and divide between the plates, squeeze some of the lime over the leaves, then top with the chicken and mango kebabs, with the other lime wedges on the side for squeezing.
  6. Serve with warmed flatbreads or rice, plus some Greek yogurt and chilli sauce for drizzling, if liked.
