Sausage, pea and corn pasta

A brilliant budget supper, this sausage pasta uses the pasta cooking water and just a little butter for a rich and silky finish.

Ingredients
- 350g Co-op Penne
- 1 tbsp olive oil
- 4 Co-op Irresistible Pork Sausages
- 2 garlic cloves, crushed
- ½ x 325g tin Co-op Sweetcorn
- 140g frozen peas
- Knob of butter
- Small handful basil leaves, torn
- Parmesan, grated, to serve
Method
- Cook the pasta in boiling water according to pack instructions.
- Heat the oil in a frying pan. Pinch the sausages in pieces into the pan and cook, stirring occasionally, for 5-6 mins until browned. Add the garlic and cook for 1 min more.
- Tip the drained sweetcorn and frozen peas into the pan with the sausage meat and cook for 2 mins. Drain the pasta, reserving a ladle of the cooking water. Add the pasta to the pan with the sausage mixture, along with the reserved cooking water. Add the knob of butter and stir until melted.
- Serve topped with the basil leaves and some grated Parmesan.
