Sausage, pea and corn pasta

A brilliant budget supper, this sausage pasta uses the pasta cooking water and just a little butter for a rich and silky finish.

Ingredients

  • 350g Co-op Penne
  • 1 tbsp olive oil
  • 4 Co-op Irresistible Pork Sausages
  • 2 garlic cloves, crushed
  • ½ x 325g tin Co-op Sweetcorn
  • 140g frozen peas
  • Knob of butter
  • Small handful basil leaves, torn
  • Parmesan, grated, to serve

Method

  1. Cook the pasta in boiling water according to pack instructions.
  2. Heat the oil in a frying pan. Pinch the sausages in pieces into the pan and cook, stirring occasionally, for 5-6 mins until browned. Add the garlic and cook for 1 min more.
  3. Tip the drained sweetcorn and frozen peas into the pan with the sausage meat and cook for 2 mins. Drain the pasta, reserving a ladle of the cooking water. Add the pasta to the pan with the sausage mixture, along with the reserved cooking water. Add the knob of butter and stir until melted.
  4. Serve topped with the basil leaves and some grated Parmesan.
