British beef enchiladas

This family-pleasing meal is made using 100% British Co-op Beef Mince. Try serving with readymade guacamole and some salad on the side.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 450g pack Co-op British Beef Mince
- 2 garlic cloves, crushed
- ½ tsp ground cumin
- ½ tsp paprika
- Pinch chilli powder (depending how hot you like it)
- 400g tin chopped tomatoes
- 2 tbsp tomato purée
- 400g tin kidney beans
- 8 Co-op Plain Tortilla Wraps
- 100g Cheddar, grated
- 3 tbsp jalapeños, sliced, plus extra to serve
- Guacamole, to serve
Method
- Heat the oil in a large frying pan. Add the onion and cook for 5 mins until softened. Then add the beef and cook for 4-5 mins until brown, breaking up the mince with a wooden spoon.
- Add the garlic to the pan and cook for 1 min, then stir in the spices and cook for 30 secs.
- Add the chopped tomatoes, tomato purée and beans. Season and simmer gently for 20-25 mins until thickened.
- Preheat the oven to 220°C/fan 200°C/gas 7. Divide the mince between the tortillas, spreading a little in the centre of each. Roll each up and put into a baking dish, nestling them next to each other. Scatter with the cheese and jalapeños, then bake for 15 mins until golden. Serve with extra jalapeños and some guacamole on the side, if liked.
