Fill up on the good stuff and feel the benefit all morning. Eggs are a great source of protein, so go for an omelette or frittata with added veg, or opt for a slow release carbohydrate such as oats, topped with fruit and seeds. Here are some quick and easy breakfast ideas that will set up your day the right way.
Full English omelette (pictured)
Fry chopped bacon, sliced mushrooms and a few halves of cherry tomato. Set the mixture aside, then heat oil in the frying pan and pour in beaten egg to make an omelette. Cook to your liking, adding the bacon mixture for the last 30 secs of cooking. Fold and serve drizzled with tomato ketchup or brown sauce.
Frozen berry overnight oats
Mix rolled oats with Greek yogurt, milk, cinnamon and some grated apple. Layer the mixture into pots with frozen berries, then leave in the fridge overnight to thaw and combine. Serve topped with seeds and more yogurt.
Salmon frittata
Fry sliced spring onion and baby spinach in a small frying pan. Stir chopped strips of smoked salmon and some seasoning into beaten eggs, then pour into the pan with the spinach and cook until almost set, grilling for the last few mins until golden.
