Easy peasy puds
These delicious yet easy dessert ideas make the most of the new crop of seasonal ingredients that are around this month, and can all be put together without too much effort.
Baked apple slices and berries
Put thick slices of apple and frozen berries into a baking dish, sprinkle with sugar and a little cinnamon and cover with foil, then bake in a medium oven for around half an hour until the apple is starting to get tender. Then take off the foil and bake for a further 10-15 mins until starting to turn golden. Serve topped with chopped nuts or crumbled biscuits, such as ginger nuts, along with a dollop of crème fraîche.
Candied lemon and blueberry Eton mess (pictured)
Sprinkle lemon slices with sugar, then bake in a low oven until almost dry. Whip double cream then gently fold through lemon curd and fresh blueberries, plus some crumbled ready-made meringue. Top with the candied lemon slices and a few extra blueberries to serve.
Banana and peanut butter cheesecake
Whizz digestive biscuits in a food processor, or bash in a sandwich bag with a rolling pin, until you have crumbs. Mix with melted butter then pack well into a round tin. Whip a couple of tubs of cream cheese with vanilla essence, mash very ripe bananas and mix into the cheese with a spoonful of peanut butter. Spoon over the biscuit base and chill to set.
Chocolate and avocado pots
Whizz avocado until creamy with melted chocolate and a little honey to taste. Spoon into small glasses and chill until set. Serve topped with fresh fruit such as berries, or chopped nuts.
