Cooking in the great outdoors
Whether you’re heading to a festival or going on a family camping trip, these easy, no-prep meal ideas are perfect for cooking al fresco.
All-in-one veggie brunch
Cook sliced mushrooms and onions in a little butter in a frying pan, then add halved cherry tomatoes and baked beans and simmer. Use a spoon to make wells in the mixture and break an egg into each; cook until the eggs are set.
Smoky sweet potatoes and yogurt (pictured)
Rub whole sweet potatoes with oil and salt, then wrap in foil. Nestle in the glowing embers of the campfire or BBQ (there should be no flames) and bake until tender. Serve with a spoonful of yogurt and more seasoning, if you like.
Chorizo, potato and pepper hash
Fry small cubes of potato until starting to go tender, then add sliced red pepper, chopped chorizo sausage, finely chopped garlic and paprika and cook until softened.
One-pot noodles
Pack up heatproof jars in a cool bag with a mix of quick-cook egg noodles, finely sliced carrots, sugar snap peas or mangetout, shredded spinach, sliced red chilli, a pinch of sugar and a crumbled stock cube. When ready to eat, pour over boiling water and stir until the noodles are tender.
