Salads with zing!

Perk up your bowl of leaves with some zippy ingredients and fruity seasonal flavours.

Peach, mozzarella and tomato (pictured)
Make a simple salad with sliced tomatoes and peach, topped with parma ham, torn mozzarella and basil. Dress with a balsamic vinaigrette.

Chicken, lime and tortilla salad
Toss shredded lettuce with some chopped avocado and feta, shredded cooked chicken and plenty of lime juice. Top with crumbled tortilla chips.

Roasted carrot, bean and orange salad
Roast slices of carrot until tender and caramelised. Combine with a tin of drained mixed beans and some orange segments. Squeeze over more orange juice and finish with some crumbled goat’s cheese.

Griddled lemon, halloumi and green beans
Rub slices of halloumi with lemon juice and a little oil, then cook on a hot griddle pan until charred and tender. Toss with cooked green beans, rocket and some extra virgin olive oil.
