Baked Avocado Eggs and Bacon
For a breakfast that’s packed with protein and healthy fats try our baked eggs in avocado. The bacon adds a delicious contrast to the mild and creamy favours of the egg and avocado, and they look pretty cute too!
Ingredients
Serves 2
- 2 Co-op Ripe and Ready Avocados
- 4 Co-op medium free range eggs
- 2 rashers of Co-op smoked back bacon, cut into small pieces
- Salt and freshly ground black pepper to taste
Method
- Preheat oven at 200°C/gas mark 6. Meanwhile, prepare avocados by cutting in half, removing the stone and scooping out a well in the middle for the egg.
- Crack an egg into each avocado and top with the bacon
- Place the avocados in oven and bake for about 10-15 minutes depending on avocado size, or how well you like your eggs to be done.
- Season to taste with the salt and black pepper and enjoy straight away.
