Baked croque madame with spinach

This baked egg dish has all the flavours of the French toastie, but is a cinch to make. Just pop the ingredients in the dish, bake and enjoy!

Ingredients

Serves: 4
Ready in: 25 mins

  • 4 thick slices of crusty bread (about 400g)
  • 2 tsp mustard
  • Co-op Trimmed Salad onions, sliced
  • Large handful Co-op Baby Spinach
  • 140g thick-cut ham
  • 6 tbsp whole milk
  • 4 large Co-op free range eggs
  • 80g Co-op Mature Cheddar, grated

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4.
  2. Put the spinach in a colander and pour over boiling water to wilt the leaves. Squeeze as much water out as possible. Roughly chop.
  3. Spread the bread slices with the mustard. Then chop roughly into chunks and put into a baking dish.
  4. Add the spring onions, spinach and ham to the dish, and gently tumble to combine, then spoon over the milk and season with salt and pepper.
  5. Make four wells in the mixture and crack an egg into each. Sprinkle over the cheese, avoiding the egg yolks, then bake for 12-15 mins until the eggs are cooked to your liking.
