Baked croque madame with spinach
This baked egg dish has all the flavours of the French toastie, but is a cinch to make. Just pop the ingredients in the dish, bake and enjoy!
Ingredients
Serves: 4
Ready in: 25 mins
- 4 thick slices of crusty bread (about 400g)
- 2 tsp mustard
- Co-op Trimmed Salad onions, sliced
- Large handful Co-op Baby Spinach
- 140g thick-cut ham
- 6 tbsp whole milk
- 4 large Co-op free range eggs
- 80g Co-op Mature Cheddar, grated
Method
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Put the spinach in a colander and pour over boiling water to wilt the leaves. Squeeze as much water out as possible. Roughly chop.
- Spread the bread slices with the mustard. Then chop roughly into chunks and put into a baking dish.
- Add the spring onions, spinach and ham to the dish, and gently tumble to combine, then spoon over the milk and season with salt and pepper.
- Make four wells in the mixture and crack an egg into each. Sprinkle over the cheese, avoiding the egg yolks, then bake for 12-15 mins until the eggs are cooked to your liking.
