Baked Paprika Chicken with Peppers & Rice

This hardworking easy dinner recipe makes a great evening meal and the leftovers can also be turned into a tasty burrito wraps, saving you both time and energy – win!
Ready in: 1 hr, plus marinating
Serves: 4 plus leftovers
Ingredients
- 3 tbsp olive oil
- 1 tbsp paprika
- 1 tsp dried oregano
- 500g pack Co-op Chicken Thigh Fillets, or 500g-600g Co-op Chicken Breast Fillets cut into 2-3 pieces
- 1 onion, sliced
- 2 garlic cloves, finely chopped
- 2 red or yellow pepper, sliced
- 300g basmati rice
- 500ml chicken stock
- 330g pack Co-op Cherry Tomatoes
- Handful fresh parsley, finely chopped to serve (optional)
- Lemon wedges, to serve
Method
- Mix 2 tbsp of the olive oil with the paprika, the dried oregano with plenty of seasoning and rub all over the chicken breast pieces, cover and set aside for half an hour.
- Preheat the oven to 200C/180C/gas 7. Rinse the rice and leave it to drain in the sieve. Toss the sliced onion, garlic and peppers in a large baking dish with the remaining oil. Put into the oven and cook for 10 mins to soften.
- Take the baking dish out of the oven and stir in the rice, cherry tomatoes and hot stock into the onion mix making sure everything is combined well. Nestle the chicken pieces on top, cover with tin foil and bake for 30 mins.
- Take the baking dish out of the oven, uncover, stir a little (repositioning the chicken if you need to). Return to the oven for 10-15 mins until the chicken is cooked through and the rice is tender. Serve scattered with some chopped fresh parsley, if liked plus some lemon wedges for squeezing. Enjoy for dinner then box up and chill leftover chicken and rice.
TIP: Rollover spice chicken burrito wraps
Take the leftover paprika chicken and cut into strips. Heat 4 Co-op Plain Tortilla Wraps according to pack instructions. Stir 198g drained tinned sweetcorn and ½ diced avocado into the leftover rice. Spread the wraps with Co-op Soured Cream and Chive Dip then pile the rice mix and chicken on top, plus some shredded lettuce and sliced jalapenos if you like a little heat.
