Beef kofte salad

You can cook these tasty koftes in the pan, or push onto skewers and grill on the BBQ if the sun is shining.

Ingredients

For the beef koftes

  • 500g beef mince
  • 1 small red onion, finely chopped
  • 2 tsp cumin
  • 1 tsp cinnamon
  • ½ tsp chilli flakes
  • ½ tsp dried thyme
  • 1 tsp olive oil

For the salad

  • 2 little gem lettuces or ½ iceberg lettuce, leaves separated and chopped
  • 4 tomatoes, chopped
  • ½ cucumber, deseeded and chopped into half moons
  • 40g raisins
  • Greek yogurt, to serve (optional)

For the dressing

  • 4 tbsp houmous
  • 1 lemon, juiced

Method

  1. Put the mince into a bowl and add the onion, spices and some seasoning. Mix until well combined. Take a small handful of the mixture and roll into a ball, pressing to flatten slightly. Repeat with the remaining mince mixture until you have about 16 balls.
  2. Heat the oil in a large frying pan and cook the koftes over a medium heat for 3-4 mins on each side, until cooked through (you may have to do this in batches).
  3.  Meanwhile, arrange the lettuce, tomatoes and cucumber on 4 plates. Make a dressing by whisking the houmous and lemon juice along with 1 tbsp water.
  4.  Serve the cooked kofte on top of the salad and scatter with the raisins and chopped mint or parsley. Drizzle over the houmous dressing and serve with a spoonful of Greek yogurt on the side, if you like.
