Black and white coffee brownies

Using the best Fairtrade ingredients, this simple bake turns out great with minimum fuss. Use Co-op Irresistible Fairtrade White or Blonde to fold through.

Ingredients
- 185g Co-op Irresistible Dark Chocolate, chopped into chunks
- 185g butter, diced
- 3 large eggs
- 275g Co-op Fairtrade Caster Sugar
- 85g plain flour
- 1 tbsp Co-op Fairtrade Instant Coffee
- 100g Co-op Fairtrade White Chocolate, chopped into small chunks
Method
- Preheat the oven to 170°C/150°C fan/gas 3. Line a 20cm square baking tin with baking paper, leaving some paper overhanging the edges.
- Put the dark chocolate and butter in a heatproof bowl set over a pan of just simmering water (don’t let the bowl touch the water). Melt together, stirring occasionally until smooth. Take off the heat and set aside.
- In large bowl, whisk the eggs and sugar together for about 5 mins, until pale and fluffy. Sift in the flour, then add the coffee granules and whisk again until combined. Pour in the melted chocolate and stir with a wooden spoon until just combined. Add the white chocolate pieces and stir a few times until incorporated.
- Pour the mixture into the prepared tin and bake in the oven for about 25-30 mins, until set and shiny on top, with a gently wobble in the middle. Cool completely in the tin before removing, using the extra paper to lift it out. Chop into 16 squares and enjoy straight away, or store in an airtight container for up to two weeks.
