Broccoli, Salmon and Pesto Tart
This delicious cheesy tart is taken to the next level with vibrant green pesto and fresh lemon zest – spring on a plate!
Ingredients

- 320g sheet Co-op Ready Rolled Puff Pastry
- 1 egg yolk, to glaze
- 120g Co-op Tenderstem Broccoli
- 3 tbsp Co-op Soft Cheese
- 2 tbsp Co-op Goats Cheese
- ½ lemon, zested
- 1 tbsp green pesto
- 2 slices Co-op Smoked Salmon
Method
- Preheat the oven to 200°C/180°C fan/gas 6.
- Line a large baking sheet with baking parchment. Unroll the puff pastry, and gently score a border 1-2cm in from the edge around the pastry. Using a fork, prick the base all over the area inside the border. Brush a little beaten egg over the border only. Bake for 15 mins, until puffed up and almost cooked.
- Meanwhile, bring a saucepan of water to the boil and cook the broccoli for 3 mins, until just tender.
- Mix the soft cheese, goats cheese, lemon zest and a little seasoning in a bowl until combined.
- Once the pastry is out of the oven, press the centre down, then spread the middle area with the soft cheese mixture. Drizzle over the pesto, then top with the broccoli and smoked salmon.
- Bake for 5-10 mins more until golden and the pastry is cooked. Serve with peas and salad leaves, if liked.
