Burgers with bacon jam

Give your burgers an exciting makeover this summer, with this delicious bacon jam recipe just in time for the BBQ days ahead.

Ingredients

  • 1 tbsp olive oil
  • 230g pack Co-op Irresistible Air Smoked Streaky Bacon Rashers, chopped into small pieces
  • 1 white onion, finely chopped
  • 2 garlic cloves, crushed
  • 4 tbsp light brown sugar
  • 2 tbsp honey
  • 3 tbsp balsamic vinegar
  • pinch chilli powder
  • 4 Co-op Irresistible Beef Burgers
  • 4 Co-op Brioche Rolls
  • Little gem or iceberg lettuce, to serve
  • 4 Co-op Cheddar Slices

Method

    1. To make the bacon jam, heat the oil in a large saucepan. Add the bacon and cook until crispy. Transfer to a kitchen roll lined bowl and set aside.
    2. Reduce the heat to low and put the onion into the bacon fat in the pan, scraping up any crispy bits from the bottom of the pan. Cook gently for 10-15 mins or until starting to brown. Stir in the garlic, sugar, honey and vinegar, along with the cooked bacon. Cook gently for about 12-15 mins until most of the liquid has evaporated and everything is jammy. Leave to cool while you make the burgers.
    3. Cook the burgers under a hot grill or on the BBQ for about 8 mins on each side until cooked through.
    4. Serve the burgers on the brioche rolls, with some little gem lettuce. Then top with a slice of cheese and a spoonful of the bacon jam.
