Cajun pork with pineapple slaw
These flavoursome chops are great on the grill for summer. The fruity slaw would also work nicely with chopped fresh mango.
Ingredients
Serves: 4
Ready in: 15 mins, plus marinating time
For the pork steaks
- 1 tbsp Cajun seasoning
- ½ tbsp paprika
- ½ tsp light brown sugar
- 1½ tbsp olive oil
- ½ lime, juiced
- 4 Co-op British Pork Loin Steaks
For the pineapple slaw
- ½ red or white cabbage, thinly sliced
- 1 carrot, thinly sliced
- 3 spring onions, sliced
- 227g tin Co-op Pineapple Slices, chopped, juice reserved
- 2 tbsp chopped coriander
For the dressing
- ½ lime, zested and juiced
- 1 tsp honey
Method
- Mix the spices, sugar, oil and lime to make the marinade, then toss in the pork steaks. Cover and chill for 30 mins.
- Meanwhile make the pineapple slaw. In a large bowl, toss together the cabbage, carrot, spring onions and chopped pineapple.
- To make the dressing, mix 1 tbsp of the reserved pineapple juice with the dressing ingredients and some salt and pepper.
- Toss the dressing through the slaw, along with the chopped coriander.
- Heat the BBQ or a griddle pan until very hot. Grill the pork steaks for 4-5 mins on each side until cooked through. Serve with the dressed pineapple slaw and enjoy!
