Chicken and grapes traybake

Take care not to overpack the tray for this simple bake – arrange everything in one layer to allow it to roast properly.

Ingredients

Ready in: 45 mins

  • 1 pack 5 Co-op British Chicken Thighs (skin on, bone in)
  • 300g new potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 red onion, chopped into wedges
  • 250g red grapes, broken into small branches
  • Crusty bread, to serve (optional)

Method

  1. Preheat the oven to 220°C/fan 200°C/gas 7.
  2. Put the chicken pieces in a large roasting tin along with the potatoes, spreading everything out so it’s in one layer. Drizzle with oil, scatter over the thyme, season, then bake in the oven for 20 mins.
  3.  Turn the oven down to 200°C/fan 180°C/gas 6. Pour off any liquid from the roasting tin, then add the onion wedges and the grapes and bake for a further 15-20 mins, until the chicken is cooked through (there should be no trace of pink in the juices when the meat is pierced).
  4.  Serve with some crusty bread, if you like.
