Chilli bean burgers

This brilliant veggie spin on a family favourite uses a mix of beans, rice and breadcrumbs to make filling yet wholesome burgers. Serve with salad, light mayo or even some chilli sauce for a spicy kick.

Ingredients

Serves: 4

Ready in: 25 mins (plus 20 mins chilling)

  • 1 garlic clove, finely diced
  • 1 shallot, finely diced
  • ½ tsp mustard powder
  • 1 tsp paprika
  • ¼ tsp chilli powder
  • 100g cooked wholemeal rice (from a microwave pack)
  • 2 x 400g tins mixed beans, drained and rinsed
  • 50g dry breadcrumbs
  • 1 egg, beaten
  • 1 tbsp olive oil

To serve:

  • 4 burger buns, toasted
  • Mayonnaise
  • Lettuce, sliced tomato and sliced red onion

Method

  1. Blitz the garlic, shallot, mustard powder, paprika and some seasoning in a food processor. Add the rice and beans and blitz again until you have a rough mixture.
  2. Transfer to a bowl and add the breadcrumbs and beaten egg. Mix well, then shape into 4 burgers. Put on a plate and chill for at least 20 mins in the fridge to firm up.
  3.  Once ready to cook, heat the olive oil in a large frying pan and add the burgers to the hot pan. Cook for 3-4 mins on each side, turning carefully.
  4. Serve the burgers in toasted buns with some mayonnaise, topped with lettuce, and sliced tomato and red onion.
