Chocolate Chunk Banana Loaf

If you’ve been inspired watching the latest Great British Bake Off but don’t know your choux from your shortbread, here is a really quick and delicious loaf cake recipe to try. It’s also the perfect use for the black bananas that the kids won’t touch!

Ingredients

  • 225g Co-op self-raising flour
  • 1 teaspoon baking powder
  • 175g white caster sugar
  • 1 teaspoon vanilla extract
  • 2 Co-op large free range eggs
  • 100g unsalted butter
  • 2 ripe bananas, mashed (the riper the better!)
  • 2 tablespoons whole milk
  • 100g dark chocolate, chopped into small chunks

Method

  1. Preheat oven to 180 degrees C /gas mark 4. Grease a 2lb loaf tin and line with greaseproof paper.
  2. Add all the ingredients (except the chocolate chunks) to a large mixing bowl (or electric mixer!) and beat well until blended.
  3. Stir in your chocolate chunks and add the batter to the prepared loaf pan.
  4. Bake for about an hour or until cake tester comes out clean. Transfer to a wire rack and allow to cool completely or until warm if you prefer.
  5. Enjoy with a nice cup of English breakfast tea!
