Christmas pizza

Topped with festive ingredients, these pizza breads are tasty, fun and easy to make – with hardly any kneading and proving.

Ingredients

  • 300g self-raising flour
  • 1 tbsp olive oil, plus extra for drizzling
  • 8 Co-op Pigs in Blankets
  • 160g Co-op Grated Mozzarella
  • ½ x 125g ball Co-op Mozzarella
  • ½ red onion, finely sliced
  • 2 Brussels sprouts, shredded
  • Pinch of chilli flakes (optional)

Method

  1. Preheat the oven to 240°C/fan 220°C/gas 9. Put the flour in a bowl with a pinch of salt. Add 160ml water and mix with your hands until you have a dough. Dust a work surface with flour, then turn out the dough and knead for about 2 mins.
  2. Roll out the dough, stretching it into a large rectangle. Pop it onto an oiled tray covered with a tea towel while you make the topping.
  3. Heat the oil in a frying pan and add the pigs in blankets. Cook for 5-8 mins until browned. Remove from the pan.
  4. Divide the grated mozzarella over the two pizza bases in an even layer, then top with the cooked pigs in blankets and scatter over the sliced red onion and Brussels sprouts. Dot the pizzas with the torn mozzarella, sprinkle with the chilli flakes (if using) and drizzle over some extra olive oil, then bake for 15-18 mins until golden and bubbling.
