Coronation chicken pasta salad
We’ve given your favourite lunchtime pasta salad a royal spin with a tasty Coronation-style dressing, rich with spices and mango chutney. Yum!
Ingredients

- 1 tbsp olive oil
- 385g Co-op British Chicken Breast, cut into strips
- 230g Co-op Penne
- 4 tbsp Co-op Mayonnaise
- 150g Co-op Greek Style Natural Yogurt
- 1 tbsp curry powder
- 1½ tbsp Co-op Mango Chutney
- 60g sultanas or raisins
- 2 large sticks celery, diced
- ½ cucumber, diced
- ½ x 30g pack coriander, leaves chopped
- 80g bag Co-op Watercress, Spinach & Rocket Salad or other salad leaves
- 1 tbsp flaked almonds, optional
Method
- Heat the oil in a frying pan and add the chicken pieces. Cook for 8-10 mins until cooked through and lightly golden. Remove from the pan and set aside to cool.
- Meanwhile, cook the pasta according to pack instructions, then drain and set aside.
- In a large bowl, mix the mayonnaise, yogurt, curry powder, mango chutney, sultanas or raisins, celery and cucumber. Stir together with the pasta until well combined.
- Chop the cooked chicken and fold through, along with the coriander and salad leaves. Top with the flaked almonds (if using) and a little more coriander, to serve.
