Coronation chicken pasta salad

We’ve given your favourite lunchtime pasta salad a royal spin with a tasty Coronation-style dressing, rich with spices and mango chutney. Yum!

Ingredients

  • 1 tbsp olive oil
  • 385g Co-op British Chicken Breast, cut into strips
  • 230g Co-op Penne
  • 4 tbsp Co-op Mayonnaise
  • 150g Co-op Greek Style Natural Yogurt
  • 1 tbsp curry powder
  • 1½ tbsp Co-op Mango Chutney
  • 60g sultanas or raisins
  • 2 large sticks celery, diced
  • ½ cucumber, diced
  • ½ x 30g pack coriander, leaves chopped
  • 80g bag Co-op Watercress, Spinach & Rocket Salad or other salad leaves
  • 1 tbsp flaked almonds, optional

Method

  1. Heat the oil in a frying pan and add the chicken pieces. Cook for 8-10 mins until cooked through and lightly golden. Remove from the pan and set aside to cool.
  2. Meanwhile, cook the pasta according to pack instructions, then drain and set aside.
  3. In a large bowl, mix the mayonnaise, yogurt, curry powder, mango chutney, sultanas or raisins, celery and cucumber. Stir together with the pasta until well combined.
  4. Chop the cooked chicken and fold through, along with the coriander and salad leaves. Top with the flaked almonds (if using) and a little more coriander, to serve.
