Fruity flapjacks

We’ve reduced the sugar and upped the goodness with these moreish fruity flapjacks. Packed with dried fruit and nuts, they’re sure to keep you going until the next mealtime.

Ingredients

  • 150g unsalted butter
  • 150g Co-op honey
  • 50g light brown soft sugar
  • 300g Co-op porridge oats
  • 60g raisins or a mix of dried fruit
  • 40g mixed seeds or chopped nuts

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4. Grease a 20x20cm baking tin and line with greaseproof paper.
  2. Put the butter, honey and sugar in a saucepan and heat gently, stirring, until the butter has melted and the sugar has dissolved.
  3. Stir the oats, raisins and mixed seeds or nuts into the butter mixture until well combined.
  4. Spoon the mixture into the baking tin and spread out evenly, smoothing the top flat with the back of a spoon. Bake for 15-20 mins, until the flapjacks are starting to turn golden at the edges, but still a little soft in the centre.
  5. Cool completely in the tin (this allows them to set – if you remove them too soon the flapjacks will fall apart), then turn out and cut into 16.
