Halloumi with green goddess salad

Packed full of crunchy (but chunky!) veggies, this delicious springtime salad is perfect for a lighter lunch or a speedy midweek supper. If you’re looking for something as healthy as it is filling, look no further.

Serves: 4 – 6
Ingredients
- 3 little gem lettuces, leaves roughly torn
- 1 cucumber, halved, seeds scooped out and sliced
- 1 avocado, sliced or chopped into chunks
- 200g frozen peas, defrosted
- ½ tbsp sesame seeds, other seeds or pine nuts
- 200g block Co-op Halloumi, sliced
For the dressing:
- 1 avocado, roughly chopped
- ½ green chilli, deseeded and chopped
- small handful fresh coriander
- small handful fresh parsley
- 1 ½ limes, juiced
- 150g yogurt
Method
- Arrange the little gem, cucumber, avocado and peas in a large serving bowl.
- Whizz the dressing ingredients in a blender with some salt and pepper until smooth.
- Gently toast the sesame seeds (or other seeds or pine nuts) in a dry frying pan for a few secs until turning golden. Remove the seeds from the pan and set aside. Fry the halloumi slices in the dry frying pan until golden on both sides, then slice into strips. Drizzle some dressing over the salad then top with the halloumi and toasted seeds and serve extra dressing on the side.
