Ham and blue cheese tart

Great for party finger food and quick to make, this simple recipe will be a hit at the party. A combination of popular flavours of ham and blue cheese loved by majority will go down a storm.

Serves: 6

Ingredients

  • 375g Co-op Ready Rolled Puff Pastry
  • 3 large eggs
  • 200g pack Co-op Soft Cheese
  • 50g Co-op Cheddar, grated
  • 80g blue cheese, crumbled
  • ½ bunch Co-op Spring Onions, sliced
  • 2 slices Co-op Irresistible Wiltshire Cured Breaded Ham, torn into strips
  • Large handful rocket or watercress
  • Salad, to serve

Method

    1. Line a medium (about 30cm x 20cm) baking tray with high sides with baking paper. Unroll the pastry and gently press it into the tin, pushing it up the sides of the tin around the edges. Prick the base all over with a fork and put into the fridge to chill.
    2. Preheat the oven to 200C/fan 180C/gas 6. Put a baking sheet into the oven to warm up.
    3. Beat the eggs in a bowl, then beat in the soft cheese and grated Cheddar until combined. Season and stir in the spring onions and half of the crumbled blue cheese.
    4. Take the pastry out of the fridge. Pour the egg mixture over the pastry base then top with the chopped ham and remaining blue cheese. Bake for 20-25 mins until golden and the filling is set. Allow to cool a little then remove from the tin, scatter over the rocket or watercress and serve with salad on the side, if liked.
