Key lime ice cream pie
This twist on the classic dessert is full of zingy flavour and is a real showstopper. Your guests won’t believe how easy it is to put together, with only five ingredients and using ready-made ice cream – plus you can make it in advance!
Ingredients
Serves: 8
Ready in: 10 mins, plus chilling and freezing time
- 75g melted butter
- 2 x packs Oreos
- 900g carton Co-op vanilla ice cream
- zest and juice of 3 limes, plus 1 extra lime to serve
- mint leaves, to decorate (optional)
Method
- Grease a 25cm loose-bottomed flan dish well with some of the melted butter. Use a food processor (or a rolling pin and a sealed food bag) to crush the Oreos, then mix with the remaining melted butter and press into the base and sides of the flan tin. Chill for at least 30 mins, or until set.
- Take the ice cream out the freezer and leave to soften. Tip into a bowl and stir through the lime juice and zest using a whisk to combine well.
- Spoon the lime ice cream mix into the chocolate case and freeze for at least 2-3 hours, until set. Serve topped with extra lime slices and some mint leaves (if you like). Allow to stand for 10 mins before slicing.
