Nectarine, mozzarella and prosciutto salad

Summer on a plate, this simple but stunning salad matches ripe tomatoes and nectarines with salty ham and mozzarella. You could also make it with regular or even sweet, flat peaches.

Ingredients
- 4 Co-op Nectarines, flesh sliced
- 250g Co-op Cherry or Baby Plum Tomatoes, halved
- 80g Co-op Watercress, Spinach & Rocket or Baby Leaf Salad
- 90g pack Co-op Prosciutto Crudo or Parma Ham
- 225g pack Co-op Mozzarella
For the dressing:
- 4 tbsp extra virgin olive oil
- 1 tbsp balsamic or white wine vinegar
- ½ lemon, juiced
- 1 tbsp honey
- 1 tsp mustard
- Handful fresh basil leaves, finely shredded
Method
- Arrange the nectarine slices, tomatoes and salad leaves on a serving plate, then tear over the Parma ham and mozzarella.
- Mix all the ingredients for the dressing, except the basil, with salt and pepper.
- Whisk until well combined, then stir in the basil and drizzle over the salad to serve.
