Peach crumble

You can have a tasty dessert on the table using just what you have in the cupboard, with this tinned fruit crumble. Peaches work brilliantly, as do tinned pears.

Ingredients
- 3 x 410g tins peach slices in juice
- 1 lemon, zested, plus ½ juiced
- 100g unsalted butter, grated
- 100g plain flour
- 50g porridge oats
- 50g caster sugar
- ½ tsp ground ginger (optional)
- Custard or vanilla ice cream, to serve
Method
- Preheat the oven to 200°C/180°C fan/gas 6. Drain the peaches from the tins, reserving 2 tbsp juice. Put the peaches and reserved juice into a medium baking dish (about 20 x 30cm). Stir in the lemon zest and juice.
- Using your fingers, rub together the butter, flour, oats, sugar and ground ginger (if using), until you have a breadcrumb-like texture. Sprinkle this crumble topping over the fruit, then bake in the oven for 30-35 mins, until golden and bubbling. Serve with custard or ice cream.
