Pineapple and coconut granita
This light dessert only takes a few minutes to prepare and is beautifully refreshing on a hot summer day.
Ingredients
Serves: 6
Ready in: 10 mins
- 450g fresh pineapple (about ½ fresh pineapple or use tinned pineapple), chopped into chunks
- 150ml pineapple juice (or syrup from tinned pineapple)
- 1 x 200ml tin Co-op Lighter Coconut Milk
- ½ lime, juiced
Method
- Put all the ingredients in a blender and whizz the until smooth.
- Pour into a freezer-proof container, cover and freeze for 4-6 hours, or until set.
- Remove from the freezer and scrape the frozen mixture with a fork until you’ve broken up the ice crystals.
- Return to the freezer, refreezing until ready to serve.
