Quick pesto chicken kiev
This impressive main course looks fancy but is low on effort and big on taste, with loads of garlic and herby flavour running through the chicken. Add some Co-op skinny fries to the plate if you want a heartier meal.

- 2 skinless chicken breasts
- ½ tbsp pesto
- 1½ tbsp Co-op Garlic & Herb Roule
- 1 garlic clove, crushed
- 40g breadcrumbs
- 1 tbsp olive oil
- 225g pack Co-op Irresistible Piccolo tomatoes or cherry tomatoes
- Steamed Co-op green beans, to serve
- Steamed or fried sliced Co-op leeks, to serve
Method
- Preheat the oven to 200°C/fan 180°C/gas 6.
- Cut a deep slit into the side of each chicken breast to make a pocket.
- Mash together the pesto, roule and garlic and spoon into the pockets of the chicken breasts, pushing the edges of the meat together to seal.
- Put the breadcrumbs on a large plate. Brush each chicken breast with a little of the oil and carefully press into the breadcrumbs, turning to coat both sides. Transfer to a roasting tin and bake for 15 mins.
- Add the tomatoes to the tin, drizzle with the remaining oil and bake for a further 10-12 mins until the chicken is golden and completely cooked through.
- Serve the Kievs along with the roasted tomatoes and some cooked green beans and sliced leeks.
