Rainbow fried rice

This Rainbow Fried Rice dish is perfect for an easy weekday dinner; colourful, nutritious, and quick to prepare, you’ll be wishing you’d have tried it sooner.

Serves: 4-5

Ingredients

  • 1 tbsp sunflower oil
  • 2 garlic cloves, crushed
  • 4 spring onions, sliced
  • 1 red pepper, sliced
  • 320g pack Co-op Vegetable Stir Fry
  • 100g frozen peas
  • ½ x 198g tin sweetcorn, drained
  • 250g pouch Co-op Quick Cook Wholegrain Rice
  • 4 tsp soy sauce
  • 4 eggs, beaten
  • Soy sauce, to serve
  • Pickled jalapenos or fresh chillies, sliced, to serve

Method

  1. Heat the oil in a wok or frying pan over a high heat. Add the garlic and spring onions and cook, stirring, for 45-60 secs. Add the peppers and stir fry veg to the pan and cook, stirring for 1 min.
  2. Put the peas, sweetcorn and rice in the pan with 2 tsp soy sauce. Stir-fry for 2 mins then make a well in the centre and add the egg. Cook for 1-2 mins until starting to set underneath, then stir the egg into the other ingredients. Cook for 1 min more until the egg is cooked. Season then serve, drizzled with the remaining soy sauce and topped with some sliced jalapenos or fresh chillies, if liked.
