Sausage and apple stuffing
This sweet and herby stuffing uses Co-op Irresistible pork sausages as its base. Make sure your baking dish is nice and shallow – that way you’ll get the best crunchy finish on top…
Ingredients
Serves: 8-10
Ready in: 50 mins, plus freezing and defrosting
- 30g butter
- 2 onions, sliced
- 1 stick celery, diced
- 1 eating apple, peeled, cored and diced
- 1 tbsp dried mixed herbs
- 2 x 400g packs Co-op Irresistible 6 Pork Sausages
- 1 lemon, zested
- 100g white breadcrumbs
- Oil, for greasing
Method
- Heat the butter in a large, non-stick frying pan until melted and foaming.
- Add the onions and cook for 8 mins, then add the celery and cook for 2 mins more. Add the apple and dried herbs and cook for another 2 mins, then take off the heat and set aside to cool.
- Score the skins of the sausages and squeeze out the meat into a large bowl. Mix in the onion and apple, plus some seasoning, and combine well.
- Grease a shallow baking dish, add the stuffing mixture and spread out to cover the base. To bake immediately, follow Step 6.
- If making ahead, cover and chill for up to 2 days or freeze for up to a month. To bake, defrost the stuffing fully first.
- Heat the oven to 200°C/fan 180°C/gas 6.Bake the stuffing in the oven for 35-40 mins until golden and crisp.
