Sausage and baked bean stew
Baked beans are a great budget buy, and they are the magic ingredient in this super tasty, and super low-cost sausage and baked bean stew.

- 340g pack Co-op Irresistible Pork Chipolatas
- ½ chicken stock cube
- 1 onion, chopped
- 1 large carrot, chopped
- 2 garlic cloves, finely crushed
- 400g tin Co-op Italian Chopped Tomatoes
- 400g tin Co-op Baked Beans
- 1 ½ tbsp olive oil
- ½ tsp dried thyme
Method

- Heat ½ tbsp oil in a casserole dish or large saucepan with a lid and then add the sausages and cook over a medium heat for 5 mins until browned, turning occasionally. Scoop out and set aside.
- Make up the chicken stock cube with 250mls boiling water and set aside.
- Add the remaining oil to the pan then add the onion and carrot. Turn the heat down and cook over a low heat for 6-7 mins until softened.
- Add the garlic and thyme and cook for 2 mins more.
- Stir in the stock and chopped tomatoes, then add the sausages back to the pan. Season and cook for 20 mins.
- Add the baked beans to the pan and simmer for 10 mins more until thickened, season and serve.
