Sausage and bean stew

Turn sausages, beans, pepper and a few cupboard essentials into a simple but flavoursome budget-friendly meal. This easy sausage and bean stew recipe is the perfect family dinner when you are craving comfort food.

Ingredients
- 2 tbsp olive oil
- 400g pack Co-op Irresistible Classically Seasoned Pork Sausages
- 2 onions, finely sliced
- 2 garlic cloves, finely chopped
- 1 red chilli, deseeded and finely chopped
- 2 red or yellow peppers, sliced into strips
- 1 tbsp red or white wine vinegar
- 1 tbsp tomato puree
- 400g tin chopped tomatoes
- 300mls chicken stock (made with ½ a stock cube)
- 2 x 400g tin kidney beans
- Large handful spinach, chopped
- Crusty bread, to serve
- Salad leaves, to serve
- Mustard, to serve (optional)
Method
- Heat the oil in a large pan then add the sausages and cook for a few mins on each side until browned all over. Remove from the pan and set aside.
- Add the onions to the oil and gently cook for 6-8 mins until softened. Stir in the garlic, chilli and peppers and cook for 2 mins more. Add the vinegar, tomato puree, chopped tomatoes and chicken stock and bring to a simmer. Add the beans to the pan, along with the browned sausages, and cook for 30 mins with the lid on.
- Stir the spinach into the stew and simmer for 2-3 mins more with the lid off. Serve with crusty bread and salad on the side plus a dollop of mild mustard if liked.
