Sweet chilli prawns and rice

This nutritious mix of prawns, brown rice and veg is a great supper dish for two but can easily be made to serve four – just double the ingredients.

Ingredients

Ready in: 20 mins

  • ½ lime, juiced
  • 1 x 160g pack Co-op King Prawns (cooked)
  • 1 tbsp olive oil
  • 1½ tbsp sweet chilli sauce, plus extra to serve
  • 1 courgette, halved lengthways and sliced
  • 2 spring onions
  • 1 clove garlic, finely sliced
  • 140g cooked brown rice
  • Handful coriander, finely chopped

Method

  1. Mix the sweet chilli sauce with the lime juice. Add the prawns to the mixture and toss to coat, then set aside.
  2. Heat the oil in a large frying pan or wok. Add the courgette and cook for 6-7 mins until just starting to turn golden, then add the spring onions and garlic and cook for another minute.
  3.  Add the prawns along with the sweet chilli dressing and the cooked rice, and toss to warm through, cooking for 3-4 mins until everything is piping hot.
  4.  Stir in some chopped coriander and serve with an extra drizzle of sweet chilli sauce, if you like.
