Tea and marmalade loaf
This loaf is very simple to make, and just a little prep for the fruit! All that’s left for you to do is bake, then pour a cuppa and enjoy…
Ingredients

- 1 Co-op Irresistible English Breakfast Fairtrade Tea bags
- 350g mixed dried fruit
- 2 medium eggs, beaten
- 250g self-raising flour
- 150g soft light brown sugar
- 100g Co-op marmalade, plus 1½ tbsp to glaze
Method

- Put the tea bag in a heatproof jug and pour over 300ml boiling water, leave to steep until you have a strong tea, then discard the tea bag. Put the dried fruit in a large mixing bowl and pour over the hot tea, then leave to sit for about 8 hrs (or overnight), until the liquid has been absorbed by the fruit.
- Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 900g loaf tin.
- Add the eggs, flour, sugar and marmalade to the soaked fruit, and stir to combine.
- Put the mixture into the loaf tin and bake in the oven for 1 hr until golden and a skewer pushed into the centre comes out clean. Cool in the tin for 15 mins, then transfer to a wire rack.
- Heat 1½ tbsp marmalade in a small pan, then brush over the top of the loaf. Allow to cool completely, then slice to serve.
