Tea and marmalade loaf

This loaf is very simple to make, and just a little prep for the fruit! All that’s left for you to do is bake, then pour a cuppa and enjoy…

Ingredients

Serves: 10

Ready in: 1hr, plus soaking

    • 1 Co-op Irresistible English Breakfast Fairtrade Tea bags 
    • 350g mixed dried fruit
    • 2 medium eggs, beaten
    • 250g self-raising flour
    • 150g soft light brown sugar
    • 100g Co-op marmalade, plus 1½ tbsp to glaze

Method

    1. Put the tea bag in a heatproof jug and pour over 300ml boiling water, leave to steep until you have a strong tea, then discard the tea bag. Put the dried fruit in a large mixing bowl and pour over the hot tea, then leave to sit for about 8 hrs (or overnight), until the liquid has been absorbed by the fruit.
    2. Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 900g loaf tin. 
    3. Add the eggs, flour, sugar and marmalade to the soaked fruit, and stir to combine. 
    4. Put the mixture into the loaf tin and bake in the oven for 1 hr until golden and a skewer pushed into the centre comes out clean. Cool in the tin for 15 mins, then transfer to a wire rack. 
    5. Heat 1½ tbsp marmalade in a small pan, then brush over the top of the loaf. Allow to cool completely, then slice to serve.
