Tutti fruitti rocky road

This alternative version of rocky road uses melted white chocolate and a mix of confectionary for a sweet and colourful effect. You could add any other combination of fillings you like, to suit your mum’s (or your!) taste – popcorn, raisins, chopped pretzels or nuts would all work well.

Ingredients

Serves: 12 squares

Ready in: 15 mins, plus chilling and setting

  • 350g Co-op White Chocolate
  • 60g malted milk biscuits
  • 10g Rice Krispies
  • 60g jelly babies, chopped
  • 40g glacé cherries, quartered
  • 20g mini marshmallows

Method

  1. Break the white chocolate into chunks and put in a microwave-proof bowl, then heat in the microwave in 30 sec bursts until melted, making sure you stir between cooking to stop the chocolate from catching. Allow the chocolate to cool to room temperature (if it’s too warm the sweets will melt when added).
  2. Put the malted milk biscuits into a sealed sandwich bag and gently crush with a rolling pin until you have a mix of fine crumbs and chunky small pieces.
  3. Put the crumbs into a large bowl and stir together with the Rice Krispies and most of the chopped jelly babies, glacé cherries and marshmallows (reserving handfuls of each for the topping).
  4. Pour over three-quarters of the melted chocolate and gently stir to combine.
  5. Spoon the mixture into a 20 x 20cm lined baking tin and press down, pushing it into the corners, so it’s packed in evenly.
  6. Drizzle the remaining melted chocolate over the top and push in the remaining jelly baby, cherry and marshmallow pieces. Put in the fridge to chill for 2-3 hrs until set. Cut into 12 pieces and store in an airtight container for up to two weeks.
