Vegetable masala

Serves: 4

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 carrots, chopped
  • 1 garlic clove, crushed
  • 3 tbsp curry paste
  • 1 medium sweet potato, chopped into chunks
  • 1 cauliflower, cut into florets
  • 350ml passata
  • 400mls coconut milk
  • 200mls vegetable stock (vegan friendly)
  • 600g kale or shredded cabbage
  • Handful fresh coriander, leaves chopped and stalks chopped
  • Rice and naans, to serve

Method

  1. Heat the oil in a large pan then add the onion and carrots cook for 5 mins. Stir in the garlic and cook for 1 min, followed by the curry paste and cook for 1 min more.
  2. Put the chopped sweet potato and cauliflower into the pan then add the passata, coconut milk and stock along with the chopped coriander stalks. Bring to the boil reduce to a simmer and cook for 30 mins.
  3. Add the kale or cabbage and cook for 5 mins. Then serve scattered with the coriander leaves, plus some cooked rice and naan.
